Louise’s Chicken & Vegetable Soup

Ingredients

2 Cartons College Inn Chicken Broth

1 Rotisserie Chicken [Save the Drippings at the bottom of the tub]

2 Pats of Butter

1 16 oz. can diced tomatoes [drained]

Fresh Parsley

Carrots

Celery

Scallions [Green Onions]

Salt & Pepper

Remove the chicken from the bone &  flake into pieces. Bring the broth to a boil. Add butter, chicken, tomatoes, onions, parsley, celery, carrots, etc., and boil until tender. [Note:  To prevent the vegetables from becoming overcooked and mushy, Louise cooks the vegetables separately until semi-soft and then adds them.]

Louise cooks some type of pasta separately and serves the soup over the pasta. She does not cook the pasta in the soup.
